Pots au Chocolat
Finely grated rid of 1/2 Orange
3 fresh Eggs seperated
65ml – 2.5fld oz of single cream
125g -4oz plain chocolate, melted over a pan of boiling water (do not let the base of the bowl of chocolate touch the water, let it melt with the hot steam)
1 tablespoon of Cointreau or Orange juice
To decorate use a spoon of whipped cream with a slice of orange and a little grated chocolate.
Seperate the white from the yolks of the egg and whisk the egg whites until stiff, set aside
Add the orange rind, egg yolks and single cream into the melted chocolate and mix well.
Stir in the Cointreau or orange juice.
Fold in the beaten egg whites to the chocolate mixture and spoon into 4-6 small cups and refrigerate until set.
When set and about to serve decorate with the whipped cream, orange slice and grated chocolate.
